Give me your elderberry recipes!

I've got a few bags of blue elderberries (Sambucus mexicanus) in the freezer.  I've got one good spiced elderberry recipe, but I'd like more!  Send 'em along, and help us fill out our gifts for friends and family this holiday season...

Josh, I too still have a ton of elderberries in the freezer. Maybe we should try a elderberry wine and liqueur making day.

I also saw someone make a side dish of brussels sprouts, elderberry and lemon...

My dad used to make Elderberry wine. It was awesome!

It looks like two votes for elderberry wine. I may have to seriously consider this, although not for Christmas presents...

You will need at least 6 pounds of berries to make wine. It's why I don't make it every year - it's a pain to gather that many. Better go with the liqueur, which doesn't need quite so much.
