Wild Radish Pickling Update

© 2011 Joshua Stark

How do you best represent the raspberry sound?

The pickled wild radishes were a failure.  They lost all their spice, and tasted like any typical green thing would taste had it sat in vinegar overnight.

I think there were a few problems:
1)  The apple cider vinegar I used was too powerful;
2)  I used too much sugar;
3)  I didn't add any other spices.

Next time, I'd like to try it with lemon juice instead of vinegar, and maybe just a touch of sugar.  However, I'm starting to think that wild radish seedpods are only good fresh, maybe diced in a salad.

Any suggestions would be greatly appreciated.
